Servings
Ingredients
2 Rolls, French (small, whole grain)
1 olive oil cooking spray
2 fresh plum tomatoes , thinly sliced
4 oz Chicken, breast, grilled , diced (or roasted)
2 oz Cheese, mozzarella, low moisture, partially skim, slice
8 oz Pimientos, canned, whole , drained and cut into strips
1 pinch salt and pepper , to taste


Directions
1 Slice the rolls in half horizontally, remove the centers, and spray each side with cooking spray.
2 Layer the tomato, chicken, and mozzarella on one side of the roll.
3 Add pimientos, salt, and pepper before covering with the top of the roll.
4 Cut in half and serve!
Additional Information
Any type of lean deli meat can be used in this recipe.
