Ingredients
6 oz unsalted tomato paste
0.5 cup red wine (or 1/2 cup water)
0.5 cup cold water
1 tsp minced garlic
0.5 tsp dried basil
0.5 tsp ground oregano
0.25 tsp salt
12 oz lean ground beef (10% fat)
12 oz ground turkey (ground turkey breast preferred)
2 piece sliced whole wheat bread , made into bread crumbs (or 1 cup whole wheat bread crumbs)
0.5 cup chopped zucchini , shredded
2 egg whites (or 1/4 cup cholesterol-free egg substitute)


Directions
1 Preheat oven to 350 degrees F. In a small saucepan combine the tomato paste with wine, water, garlic, basil, oregano and salt. Bring mixture to a boil and reduce the heat to low, allowing the mixture to simmer, uncovered for 15 minutes. Set aside.
2 In a large bowl combine the beef, turkey, bread crumbs, zucchini, and egg whites and tomato mixture, Set aside 1 /2 cup of tomato mixture, add the rest to the meat, and mix . Shape it into a loaf and place it into an ungreased loaf pan 9X5X3-inch and bake 45 minutes.
3 Discard any drippings. Pour the remaining 1/2 cup of tomato mixture over the top of the loaf and bake for an additional 15 minutes. Allow to cool 10 minutes before cutting into 8 slices.
