1 In nonstick skillet, heat oil to medium. Sauté onion and garlic for 3 minutes. 2 Add tomatoes, lemon juice, coriander, ginger, pepper, and cumin.
3 Bring to boil then lower heat. Cover and let simmer for 15 minutes. Stir once to mix. 4 Add shrimp and cook for 3 to 5 minutes, until shrimp is pink and opaque. Garnish with parsley.
