Ingredients
1 lb large raw shrimp , peeled, deveined, rinsed, and patted dry
1 tbsp extra virgin olive oil
1 medium onions , chopped
2 medium garlic cloves , minced
4 cup canned unsalted diced tomatoes , drain well
2 tbsp fresh lemon juice
0.5 tsp ground coriander
0.25 tsp ground ginger
0.12 tsp ground cayenne (red pepper)
0.25 tsp ground cumin
4 parsley sprigs


Directions
1 In nonstick skillet, heat oil to medium. Sauté onion and garlic for 3 minutes.
2 Add tomatoes, lemon juice, coriander, ginger, pepper, and cumin.
3 Bring to boil then lower heat. Cover and let simmer for 15 minutes. Stir once to mix.
4 Add shrimp and cook for 3 to 5 minutes, until shrimp is pink and opaque. Garnish with parsley.
