1 Put the scallops and oil in a bowl and toss to mix. Heat a nonstick skillet over high heat. 2 Place half of the scallops in the skillet. Cook for 2 minutes then turn over and cook for another 2 minutes. Transfer to a plate and wipe with paper towels. Repeat this process with the other half of the scallops. 3 Mix together the orange juice, curry powder, pepper, and salt in a bowl then pour into the skillet. Cook for 1 minute over medium-high heat. Serve the sauce on the side.
Additional Information
Use more or less curry powder to achieve the desired spiciness.
