Ingredients
3 large red bell peppers , seeded and cut into chunks
1 whole jalapeno pepper , small
0.5 whole heads of garlic , separated into cloves and peeled
2 parsley sprigs , or coriander
2 tbsp olive oil
1 pinch salt , to taste


Directions
1 Pulse first 4 ingredients in a food processor or hand grinder.
2 Transfer mixture to a small saucepan and add oil and salt. Cook over low heat for 15 minutes, stirring constantly, until some of the liquid evaporates. Keep refrigerated.
Additional Information
Can be used as spice for soups or as a dip.
