Ingredients
1 lb fresh tomatoes , roughly chopped (ripe)
2.5 cup Consomme, beef, prepared with water, 10.5oz can
1 Onion, red, fresh, small, whole , halved
2 medium celery stalks , cut into large pieces
1 medium garlic cloves , roughly chopped
1 tbsp unsalted tomato paste
2 tsp fresh lemon juice
2 tsp Sauce, worcestershire, low sodium
6 fresh basil leaves
2 tbsp vodka
1 pinch salt and pepper , to taste (optional)
10 ice cubes , crushed
4 piece Celery, strips, 4" long, fresh
4 piece Bread, focaccia , or sundried tomato bread (optional)


Directions
1 Place the chopped tomatoes, consomme, onion and celery in a blender or food processor. Add the garlic, then spoon in the tomato paste.
2 Pulse until vegetables are finely chopped, then process to a smooth paste.
3 Press the mixture through a strainer into a large bowl and stir in the lemon juice, Worcestershire sauce, basil leaves and vodka.
4 Add salt and pepper to taste. Cover and chill.
5 Serve the soup with small amount of crushed ice and place a celery stick in each bowl.
Additional Information
Vegetable stock can be substituted for beef consomme if serving vegetarians.
