2 cup vegetable oil , for frying hush puppies
1 cup Cornmeal, white, degerminated, enriched
1.5 tsp white all purpose flour
0.5 tsp low sodium baking powder
1 tsp sugar
0.75 tsp salt
0.5 cup low fat buttermilk
1 eggs , beaten
0.5 small onions , finely minced


Directions
1 In a deep-fat fryer, heat oil to 375 degrees F.
2 Sift together dry ingredients into a medium bowl; in a small bowl stir together buttermilk, egg, and onion.
3 Stir wet ingredients into dry; stirring to mix well but do not overbeat. Drop one tablespoon at a time into the hot oil.
4 In about three minutes, the hush puppies will turn golden brown and float to the top. Remove from oil with a slotted spoon and drain on paper towels. Serve warm. Makes about 12 hush puppies.
