Ingredients
2 tbsp olive oil
0.5 tsp garlic powder
0.5 tsp fresh ginger root , finely chopped
0.5 tsp black pepper , ground
0.5 tsp cardamom, ground
0.5 tsp chili powder , mild
1 tbsp low sodium soy sauce
1.5 lb whole loin lean pork chops , cubed
2 tbsp distilled white vinegar
1 tbsp curry powder
1 cup chopped carrots
1 cup fresh cauliflower , chopped
1 cup fresh broccoli florets , chopped


Directions
1 Blend oil, garlic powder, ginger, cardamom, chili powder, and soy sauce in large skillet. Add pork; stir-fry pork over medium-high heat 3 minutes.
2 Add vegetables, vinegar, and curry. Reduce heat; simmer, stirring occasionally, until vegetables are tender. Serve over rice.
