Ingredients
0.67 cup buckwheat flour
0.5 cup white all purpose flour
1 tsp low sodium baking powder
0.25 tsp baking soda
0.25 tsp salt
0.12 tsp ground nutmeg
0.75 cup plain nonfat yogurt
0.25 cup honey
0.25 cup fat free milk
2 tbsp vegetable oil
0.75 tsp vanilla extract
3 eggs , lightly beaten


Directions
1 In a large bowl, mix both flours with the baking powder, baking soda, salt, and nutmeg.
2 In a separate bowl, mix the yogurt, honey, milk, oil, vanilla extract, and egg; add to the dry ingredients and mix until smooth.
3 Heat a griddle until hot and spoon about 1/4 cup of batter for each pancake.
4 When top of pancake bubbles and edges look cooked, flip and cook the other side. Remove from griddle and serve.
Additional Information
Make sure you store buckwheat flour in the fridge, whole grain flours go bad very quickly at room temperature.
