1 Preheat the oven to 350 °F. Coat 9" round cake or pie pan with cooking spray. 2 Add honey to pan. Place in oven 2 minutes to soften honey. Remove pan from oven and tip pan to evenly coat with honey. 3 Evenly sprinkle pecans over honey. 4 Sprinkle cut side of peaches with cinnamon. 5 Place peaches, cut side down, on top of pecans. With fork, pierce each peach half several times. 6 Baked, uncovered, 20 minutes, until tender. 7 Place peaches, cut side up, on serving platter. Cover loosely and set aside. 8 Into hot baking pan, add margarine and vanilla to honey-pecan dripping, stirring until margarine melts. 9 Evenly divide sauce, and spoon over peaches. Let stand 10 minutes. 10 Serve warm or at room temperature.
