1 Combine beets and water in a pot and simmer for 15 minutes. Strain and run under cold water. Peel skins off beets and chop into quarters. 2 Preheat oven to 400 degrees F. 3 Coat a baking sheet covered with aluminum foil with cooking spray. Lay beets and onions on pan and coat with cooking spray. Spoon 2 tablespoons of honey on top of vegetables. Bake for 40 minutes or until beets are soft. 4 Move beets and onions to a serving bowl. 5 Whisk 2 tablespoons of honey with vinegar, oil, and garlic. Spoon dressing over beets. Toss mixture with currants and walnuts. Sprinkle with salt, pepper, and parsley.
