Ingredients
1.5 lb fresh whole beets
1 cooking spray
2 red onion , cut into wedges
4 tbsp honey , divided
2 tbsp red wine vinegar
1 tbsp canola oil
3 tsp garlic cloves, chopped (4 garlic cloves )
0.25 cup seedless raisins
3 tbsp chopped walnuts , toasted
1 pinch salt
1 pinch black pepper
1 pinch chopped parsley


Directions
1 Combine beets and water in a pot and simmer for 15 minutes. Strain and run under cold water. Peel skins off beets and chop into quarters.
2 Preheat oven to 400 degrees F.
3 Coat a baking sheet covered with aluminum foil with cooking spray. Lay beets and onions on pan and coat with cooking spray. Spoon 2 tablespoons of honey on top of vegetables. Bake for 40 minutes or until beets are soft.
4 Move beets and onions to a serving bowl.
5 Whisk 2 tablespoons of honey with vinegar, oil, and garlic. Spoon dressing over beets. Toss mixture with currants and walnuts. Sprinkle with salt, pepper, and parsley.
Additional Information
This recipe works great with potatoes also.
