Directions
1 Preheat oven to 425 degrees F. Spray nonstick cooking spray into a nonstick pan, then add oil, and heat.
2 Sauté garlic, carrots, and onions until brown and soft, about 8 minutes. Add green bell peppers and cook for 2 additional minutes.
3 Add beef, stirring to break up and crumble, and cook until no longer pink, about 2 minutes. Remove pot from heat, stir in tomato sauce, mozzarella, and parmesan cheese.
4 Spray a baking sheet with nonstick cooking spray. Place one wrapper at a time on work surface with the corner pointing towards you.
5 Place 2 tablespoons of the meat filling in the center of the wrapper. Fold the lower corner up over the filling, fold in the 2 side corners, and roll the whole thing away from you. Place on baking sheet.
6 Repeat with the remaining wrappers, place in oven and bake until brown, about 14 minutes. Turn the pizza rolls after 7 minutes.
Additional Information
Tips for using the wrappers: When working with wrappers one at a time, keep the remaining wrappers covered with a cloth so they don't dry out. Wetting the edges with water may help secure them close. They can also be made ahead of time and frozen for up to 1 month.
