Directions
1 Preheat the oven to 350 degrees F. Spray baking sheet with nonstick cooking spray and set aside.
2 In a medium bowl, beat cake mix with orange juice, orange peel and vanilla with an electric mixer at medium speed for 2 minutes or until the mixture looks crumbly.
3 Increase speed of mixer and beat mixture for 2 minutes or until the smooth dough forms, which will be very sticky.
4 Use nonstick cooking spray to coat hands. Take dough and shape into 1-inch balls and place balls on prepared baking sheets about 2 1/2 inches apart.
5 With thumb press center of each ball and fill in the thumbprint mark with 1/4 teaspoon of fruit spread and sprinkle nuts over the top.
6 Bake cookies for 8 to 9 minutes or until the cookies have become a light golden brown and are no longer shiny, making sure to not overbake.
7 Remove cookies from oven and place on wire racks allowing cookies to cool completely.
