Ingredients
1 tsp extra virgin olive oil
0.5 cup fresh chopped onion
0.67 cup chopped red bell peppers
0.33 cup fresh mushrooms , sliced
1 large garlic cloves , minced
9 oz fresh baby spinach , coarsely chopped (1 whole bag)
3 tbsp low fat cream cheese , at room temperature


Directions
1 Set a nonstick skillet over medium heat. Add the olive oil. Heat for 30 seconds, then add the onions. Cook, stirring periodically, for 2 minutes.
2 Add the bell pepper, mushrooms, and garlic. Cook, mixing occasionally for 5-7 minutes, or until vegetables are tender.
3 Add the spinach, cook, stirring constantly for 2-3 minutes or until spinach leaves have wilted.
4 Remove from heat, adding the cream cheese and stirring until it melts. Serve immediately.
