Ingredients
1 tsp instant coffee granules
0.5 cup cold water , very hot
0.5 cup margarine , at room temperature
0.5 cup brown sugar
0.5 cup SPLENDA® No Calorie Sweetener, granulated
2 egg whites , at room temperature
2.25 cup white all purpose flour
2 tbsp Buttermilk, dried
0.5 tsp low sodium baking powder
0.5 tsp baking soda
1 tsp ground cinnamon
0.5 tsp ground nutmeg
0.25 tsp ground cloves
0.25 cup seedless raisins
0.25 cup chopped walnuts


Directions
1 Preheat oven to 375 degrees F.
2 Mix coffee and water together and set aside.
3 Cream margarine, brown sugar, and sugar substitute together at medium speed.
4 Mix together the flour, dry buttermilk, baking powder, soda, cinnamon, nutmeg, cloves, and raisins before stirring into the creamed mixture.
5 Stir in nuts and coffee mixture.
6 Mix together at medium speed and then drop by 1 1/2 tablespoonfuls onto greased cookie sheets.
7 Bake for 10 to 12 minutes, remove from hot cookie sheet, and let cool to room temperature before serving!
