Directions
1 Prepare the Herb Rub by mixing the oregano, thyme, lemon pepper, garlic powder, onion powder, brown sugar, and salt in a small bowl.
2 Prepare the kabobs by rinsing the meat in cool water. Pat it with paper towels to dry. Cut the meat into thin 1/4-inch strips and place in a shallow nonmetal container.
3 Sprinkle the Herb Rub over the steak and toss to mix. Drizzle the olive oil over the steak and toss again.
4 Set aside for 15 to 30 minutes. If a more intense flavor is desired, cover and refrigerate for a maximum of 24 hours.
5 Thread one mushroom, a steak strip, and another mushroom onto each skewer.
6 Spray a large broiler pan with nonstick cooking spray and place the skewers on the pan. . Spray a light coat of olive oil cooking spray on the skewers and broil, turning occasionally, for approximately 8 minutes until the skewers are browned and the steak is done.
7 If grilling, grill over medium heat for 8 minutes.
Additional Information
Use 28 6 inch skewers. If using wooden skewers, be sure to soak them in water for 20 minutes before use to prevent burning.
