Ingredients
0.5 cup fresh basil
0.33 cup fresh mint
3 tbsp fresh jalapeno chili peppers , seeded, minced
2 tbsp distilled white vinegar
2.5 tsp fresh ginger root , peeled, minced
1 tsp sugar
2 tsp fish sauce
2 medium garlic cloves , chopped
24 oz whole salmon , 4 6 oz steaks (about 1 inch thick)
0.5 tsp salt
0.12 cup black pepper
1 cooking spray
0.25 cup fresh basil , chopped (for garnish)
1 medium limes , 4 wedges (for garnish)


Directions
1 Preheat grill.
2 Using a food processor or blender, puree basil, mint, pepper, vinegar, ginger, sugar, fish sauce, and garlic until smooth. Reserve.
3 Season salmon with salt and pepper. Arrange salmon on cooking spray coated grill.
4 Cook 5 minutes per side or until preferred degree of doneness. Serve sauce with salmon and top with basil and limes.
Additional Information
Add some pine nuts or walnuts into the sauce for even more flavor and texture.
