Ingredients
6 piece fresh romaine leaves
3 medium tomatoes , sliced
1 lb boneless skinless chicken breasts , diced and cooked without salt
0.25 cup plain nonfat yogurt
0.25 cup fat free mayonnaise
2 fresh green onions , thinly sliced
1 fresh carrots , grated
3 tbsp fresh chopped celery
0.5 small green bell peppers , chopped
2 tbsp chopped parsley
1.5 tbsp tarragon vinegar , or 1 1/2 tablespoons rice vinegar
1 tsp Worcestershire sauce
1 tsp salt free seasoning
0.25 tsp black pepper , or to taste


Directions
1 In a large bowl, stir together all of the chicken salad ingredients.
2 Cover and refrigerate for at least 1 hour.
3 To serve, place a scoop of chicken on top of a lettuce leaf and tomato slice.
Additional Information
Also can work as stuffing for tomatoes, bell peppers, or zucchini.
