Ingredients
1 medium shallots , peeled and diced, mostly white part
3 medium garlic cloves , minced (or to taste)
2 cup cooked white beans
1 tbsp fresh lemon juice (or white wine vinegar)
0.5 tsp dried basil
0.5 tsp ground thyme
0.5 tsp dried dill weed
0.5 tsp ground tarragon
0.5 tsp white pepper
0.25 tsp ground nutmeg
0.5 tsp salt (to taste)
1 tbsp capers (optional)
1 tsp stoneground mustard (optional)
1 tbsp tahini (optional)
2 tbsp chopped parsley (optional)
1 tbsp fresh tarragon , minced (cilantro, dill weed or basil - optional)
1 pinch hot pepper sauce (optional)
2 cup fresh watercress, chopped , fresh minced herbs, lemon slices or olives for garnish (optional)


Directions
1 Place shallots, and garlic in a food processor or blender; process a few seconds.
2 Add all remaining ingredients (except those that are optional) and puree until smooth. Taste and add optional ingredients as desired; puree until smooth.
3 Transfer to a serving dish or decorative crock and garnish.


Additional Information
Refrigerate overnight to allow flavors to develop.
