Ingredients
1 whole chicken, raw , free range, cleaned (about 2 lbs.)
4 medium garlic cloves , sliced
5 parsley sprigs
0.5 oz herbes de provence (1 tbsp)
1 pinch black pepper


Directions
1 Preheat oven to 350 degrees F.
2 Place chicken on a roasting pan. Separate and lift skin over breast and insert parsley and garlic.
3 Sprinkle Herbs de Provence over the skin and add pepper.
4 Bake for 30 minutes or until cooked and tender (meat should not be pink).
Additional Information
Herbs de Provence can be found in specialty food stores or can be substituted with equal amounts of dried thyme and rosemary.
