Ingredients
2 eggs , lightly beaten
1 cup lowfat milk
0.5 cup Yogurt, vanilla, low fat
0.33 cup honey
1 cup cornmeal (white or yellow stoneground)
1 cup white all purpose flour
2 tsp low sodium baking powder
0.5 tsp salt
1 tsp chili powder


Directions
1 Lightly spray 12 cup muffin pan with nonstick cooking spray. Preheat oven to 375 degrees F.
2 In a medium bowl, mix the eggs, milk, yogurt, and honey.
3 In a separate large bowl, mix the cornmeal, flour, baking powder, salt, and chili powder. Add in the yogurt mixture and mix until dry ingredients are just moistened, batter will be a little lumpy.
4 Evenly spoon into muffin pan, bake until golden, about 20 minutes; serve warm.
Additional Information
To get all the honey out of the measuring cup, spray it first with nonstick cooking spray before measuring honey.
