Directions
1 Separate the egg whites from the egg yolks in both eggs. Discard the yolks.
2 Next, beat the egg whites until they thicken. Add the sugar, and continue to beat until the mixture stiffens.
3 Then, in a small saucepan, heat the apple juice and water over a mediumm heat until it just starts to boil. Once it does, reduce the heat and allow it to simmer. Drop the egg whites mixture by the teaspoonful into the simmering water/apple juice mix. Simmer this all together for three minutes.
4 Lastly, remove the egg clouds from the pan and ladle them over the piece of bread (or toast, depending upon your preference).
