Ingredients
2 lb Pork, shoulder, whole, lean, raw
0.5 tsp salt
0.25 tsp black pepper
1 cooking spray
1 tbsp Oil, canola
20 oz canned pineapple tidbits , undrained
1 large onion , cut into thick wedges
2 tbsp fresh ginger root , grated
1 tbsp fresh lemon juice
0.5 tsp hot red pepper flakes
2 tbsp cornstarch
2 tbsp cold water , cold
2 floz red bell peppers, sliced , cut into bite-sized pieces


Directions
1 Remove excess fat from meat. Cut meat into 1 1/2-inch pieces. Sprinkle meat with salt and black pepper.
2 Lightly coat a large skillet with cooking spray and cook half of the meat in hot skillet over medium-high heat until brown.
3 Transfer to a 3 1/2- or 4-quart slow cooker. Add cooking oil to skillet. Cook remaining meat in hot oil until brown.
4 Drain off fat. Add meat to cooker. Stir undrained pineapple, onion, ginger, lemon juice, and hot pepper flakes into meat in cooker.
5 Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
6 If using low-heat setting, turn to high-heat setting. Combine in a small bowl cornstarch and water. Stir cornstarch mixture and sweet peppers into mixture in cooker.
7 Cover and cook for 15 to 30 minutes or until sweet peppers are crisp-tender, stirring occasionally.
