1 tbsp canola oil
1 medium onions , cut into quarters and thinly sliced (~ 6 oz)
1 medium carrots , sliced 1/2-inch thick
4 oz Fresh green beans , cut into 1-inch lengths
1 medium zucchini , sliced 1/2-inch thick (~ 6 oz)
6 oz fresh cauliflower florets , halved or quartered
0.33 cup low fat unsalted chicken broth
0.5 tsp ground thyme
1 pinch black pepper , freshly ground (to taste)
1 pinch salt (to taste)


Directions
1 In a large nonstick skillet or wok, heat oil over medium-high heat. When hot, add onion,and stir fry until onion wilts, about 4 minutes.
2 Add carrots and green beans. Continue to stir fry for 5 minutes. Add zucchini and cauliflower. Stir fry for 2 minutes.
3 Stir in chicken broth and thyme. Cover and cook until vegetables are tender, about 5 minutes more.
