Ingredients
1 Cooking Spray, canola, with butter flavor, 1/3 sec spray
1 medium apples , peeled, cored, and chopped (tart, such as Pippin, Granny Smith, or Fuji)
0.33 cup Cheese, cheddar, sharp, reduced fat, finely shredded
2 eggs
1 cup Flour, all purpose, unbleached, enriched
0.25 tsp salt
1 cup lowfat milk
1 tbsp Margarine, 80% fat , melted


Directions
1 Preheat oven to 450 degrees F.
2 Lightly coat 8 popover cups with cooking spray. Place 1 tablespoon each of the apple and cheese at the bottom of each popover cup.
3 In a food processor or blender, combine eggs, flour, and salt. Process until well blended. With the machine running, add milk and margarine through the feed tube. Process until smooth.
4 Fill the cups two-thirds full with the batter.
5 Bake for 15 minutes, then reduce oven temperature to 350 degrees F, and continue to bake for another 20 minutes until popovers are puffed and golden brown.
6 Let cool at least 15 minutes, then remove from pan.
Additional Information
Serve with a heart ystew.
