Servings
Ingredients
3 tbsp sugar
1.5 tbsp cornstarch
0.75 cup cold water
3 tbsp cider vinegar
2 tsp margarine
1 pinch salt (to taste)
1 pinch black pepper (to taste)
1 lb cooked sliced beets , sliced or julienned, warm
1 pinch chopped parsley


Directions
1 Combine sugar and cornstarch in a saucepan.
2 Mix in water and vinegar and bring to a boil. Whisking continually, continue boiling 1 minute or until mixture is thick. Remove from heat.
3 Mix in margarine and sprinkle with salt and pepper.
4 When ready to serve, spoon sauce over beets and top with parsley.
Additional Information
This sauce also works over carrots or pearl onions. Vary the amount of vinegar depending on how much tartness you like.
