Ingredients
2 tbsp canola oil
2 lb Potatoes, peeled, cooked, medium 2 1/4" to 3 1/4" , such as Yukon gold
6 oz red onion , finely chopped
0.25 cup white all purpose flour
1 tsp salt
0.25 tsp black pepper , freshly ground
2 eggs , lightly beaten
0.5 cup unsweetened applesauce , for serving
0.5 cup Sour Cream , for serving


Directions
1 Heat oven to 450º F.
2 Brush 2 baking sheets with 1 tablespoon of the oil and put aside.
3 Coarsely grate the potatoes and put in a large bowl with the onion, flour, salt, pepper, eggs, and the remaining tablespoon of oil. Toss to mix well.
4 Drop by tablespoonfuls onto baking sheets and press lightly to make patties.
5 Bake 10 minutes or until golden brown on the bottom.
6 Flip latkes and rotate the baking sheets. Bake another 5 minutes or until golden.
7 Serve with the applesauce and sour cream.
