Servings
Ingredients
2 medium apples , core and slice into 1/2-inch pieces
2 oz dried apricots , chopped
1 tbsp packed dark brown sugar
2 tbsp cold water
0.5 tsp curry powder
0.25 tsp vanilla extract
1.5 tsp margarine (trans fat free)
8 oz sliced ham lunchmeat, extra lean
1 cooking spray


Directions
1 In medium saucepan, place apples, apricots, brown sugar, water, and curry and bring to boil. Reduce heat, cover, and let simmer 5 minutes, stirring occassionally.
2 Remove from heat, add vanilla and margarine, stir, cover, and let stand 5 minutes.
3 Coat skillet with cooking spray and medium high. Add ham and cook 1 to 2 minutes on each side, until it begins to brown.
4 Transfer ham to plates and serve with curried apples.
