1 Heat oven to 425 degrees F. Grease bottom and sides of rectangular baking dish, 13 x 9 x 2 inches, with shortening or cooking spray. 2 Sprinkle ham, onion, bell pepper and frozen asparagus in baking dish. 3 In a medium bowl, beat eggs, milk, flour, Parmesan cheese, salt, pepper and tarragon with fork or wire whisk until smooth. Pour over ham mixture. 4 Bake uncovered for 20 minutes or until knife inserted in center comes out clean. Sprinkle with Cheddar cheese. Bake 3 to 5 minutes, or until cheese is melted. Let stand 5 minutes before cutting.

May substitute broccoli for asparagus. May use egg-substitute.
