Directions
1 Light a gas or charcoal grill.
2 Drain the pineapple and save the juice. Pour the juice into a glass baking dish.
3 Mix in the garlic, ginger, cumin, and red pepper flakes. Set the fillets in the juice and coat both sides.
4 Let marinade in the juice for 20 to 30 minutes.
5 Grill the fillets for about 5 minutes, brushing the marinade on once.
6 Flip the fillets over and add the pineapple. Cook for an additional 5 minutes.
7 Flip the pineapple slices over once. Brush both the pineapple slices and the fillets with the marinade.
8 Set the pineapple slices on top of the fillets.
Additional Information
The fillets should be cut about 1-inch thick.
