1 Preheat the oven to 350 degrees F.
2 Put the fillets in a 9-inch casserole dish. Pour the lemon juice in the dish and coat both sides of the fish and marinate for 10 minutes.
3 Heat the oil in a nonstick skillet and saute the garlic. Place garlic on top of fish, and add the chicken broth, pepper, mushrooms, carrot, and mint to the baking dish.
4 Cover the dish with foil and bake for about 25 to 35 minutes.
Additional Information
You can use cod fillets as well.
