Ingredients
8 oz grouper fillets, raw , 1/2 to 1 inch thick (2 pieces)
0.5 cup chopped red bell peppers
1.5 tsp margarine , or butter
1 medium tomatoes , peeled, seeded, and chopped
1.5 tsp sugar
1.5 tsp red wine vinegar
0.12 tsp salt
1 pinch garlic powder
1 pinch ground red pepper (cayenne)
1 tbsp fresh lemon juice
1.5 tsp olive oil
0.12 tsp dried rosemary , crushed
1 cooking spray


Directions
1 In small saucepan, melt margarine over medium. Add peppers and cook until tender. Stir in tomato, sugar, vinegar, salt, garlic powder, and ground red pepper.
2 Cook 5 more minutes, stirring occasionally. Cool slightly.
3 In blender, place sauce and blend until smooth. Return to saucepan, cover, and keep warm.
4 Preheat grill to medium.
5 Rinse fish, pat dry with paper towels.
6 In small bowl, combine lemon juice, olive oil, and rosemary. Brush both sides of fish with lemon mixture.
7 Coat grill basket with cooking spray. Place fish in basket, tucking under any thin edges. Place basket on rack of uncovered grill directly over heat.
8 Grill 4 minutes per side, until fish flakes easily when tested with a fork, turning basket once.
9 Transfer fish to serving platter and serve with sauce.
