Ingredients
2 fresh tomatoes
3 tbsp bread crumbs
2 tbsp fresh basil , minced
1 tbsp chopped parsley
1 tbsp capers, drained , minced
1 large garlic cloves , minced
1 tsp olive oil
1 cooking spray


Directions
1 To prepare, cut tomatoes in half horizontally. Remove seeds with the tip of a spoon, leaving pulp intact; discard seeds. Set tomato halves aside.
2 Combine breadcrumbs and next 4 ingredients in a bowl. Spoon breadcrumb mixture evenly into tomato halves. Drizzle with oil.
3 Coat grill rack with cooking spray, place on grill over medium-hot coals (350-400 degrees F).
4 Tear off a 12-inch square piece of aluminum foil poke holes in foil with a wooden pick. Place foil on grill; arrange tomato halves on foil. Grill, covered, 15 minutes or until tomato halves are tender.
Additional Information
You can broil these tomato halves instead of grilling them. Make sure you broil them 5 1/2 inches from heat (with electric oven door partially opened) 6 minutes or to desired degree of doneness.
