Ingredients
1 tbsp olive oil (for brushing drizzling)
6 medium tomatoes , thickly sliced
4 piece Bread, Irish soda, prepared from recipe
1 tbsp balsamic vinegar (for drizzling)
1 pinch salt and pepper
1 tbsp Cheese, parmesan, fresh, shredded


Directions
1 Begin by brushing a griddle pan with olive oil and heat. Add the tomatoes slices and cook them for 4 to 6 minutes, or until softened and slightly blackened, turning once.
2 While the tomatoes are cooking, lightly toast the soda bread. Once the tomatoes have finished cooking, place them on top of the toast and drizzle each portion with a little olive oil and vinegar. Season to taste and serve immediately with thin shavings of Parmesan.
Additional Information
Using a griddle pan reduces the amount of oil required for cooking and also gives the tomatoes a barbecued flavor.
