2.5 lb top sirloin steak, lean
3 tbsp olive oil
0.5 oz balsamic vinegar , 1 Tablespoon
1 pinch black pepper , freshly ground
2 oz grated Parmesan cheese
12 oz arugula
1 pinch salt (optional)
8 oz fresh cherry tomatoes , halved


Directions
1 Preheat grill to medium.
2 Rinse and dry beef. Trim any excess fat and rub with olive oil.
3 Place steak on grill, cover and cook 6 - 8 minutes per side or until internal temperature reaches 125°F. Remove from heat, let stand 5 minutes.
4 In a large bowl whisk together 1 tablespoon each olive oil and vinegar. Place arugula in bowl and toss. Transfer arugula to serving platter.
5 Slice steak into 1/4" thick pieces, season with salt and pepper. Place on top of arugula. Garnish with shaved parmesan cheese and cherry tomatoes.
6 Season with 2 additional tablespoons olive oil, if desired, before serving.
