Ingredients
0.5 lb salmon fillet
1 pinch salt
8 oz arugula , 1 cup, packed
0.25 cup fresh basil
0.25 cup plain yogurt, whole milk
2 tsp fresh lime juice (or lemon juice)
1 tbsp mayonnaise
1 medium tomatoes , sliced
1 pinch black pepper


Directions
1 Preheat grill to medium.
2 Sprinkle salmon with salt and pepper to taste. Grill 5 - 7 minutes per side.
3 Remove any large stems from arugula and place in food processor.
4 Add yogurt, lemon juice, basil, and mayonnaise. Process until smooth.
5 Spoon over grilled salmon.
6 Garnish with sliced tomatoes, serve hot.
