Grilled Salmon
1 tsp black pepper , freshly ground
1 lb salmon fillet (4 - 4 ounce fillets)
2 tsp olive oil
1 pinch salt

Wraps
4 oz cream cheese
2 tbsp fresh chopped onion (Vidalia)
1 pinch salt (optional)
1 pinch black pepper (optional)
4 whole wheat tortillas (7-8 inches)
1 cup fresh chopped spinach


Directions
Grilled Salmon
1 Preheat the grill to medium-high.
2 Brush the salmon fillets with olive oil and season with salt and pepper, to taste.
3 Grill 3 to 4 minutes per side, until fillets are cooked to order.
4 Transfer fillets to cutting board. Allow to cool and cut into small pieces.
Wraps
1 In small mixing bowl, combine cream cheese and onion. Add salt and pepper to taste.
2 Place tortillas on a work surface.
3 Divide and spread cream cheese mixture in middle of each tortilla.
4 Divide salmon between tortillas, top with shredded spinach.
5 Tightly toll tortilla ending with seam side down.
6 Slice wraps diagonally and serve.
