Ingredients
4 Onion, red, fresh, large, whole , 1/2" rounds
6 tbsp extra virgin olive oil
1 pinch salt and pepper
6 fresh tomatoes , cored and cut into 3/4" wedges
1 cup fresh basil , coarsely chopped
4 tsp balsamic vinegar


Directions
1 Preheat grill to medium high.
2 Brush each side of onion slice with 4 tablespoons olive oil and place rings on baking sheet.
3 Sprinkle with salt and pepper. Thread onions onto metal skewers.
4 Cook onions, 10 to 12 minutes, turning once.
5 Transfer onions to cutting board and cool slightly. Remove skewers and cut onion slices in half.
6 Place in serving bowl and toss gently, separating the layers.
7 Add tomatoes, basil, salt, and pepper.
8 Drizzle remaining oil and vinegar over salad and toss gently.
