Directions
1 Wash chicken under cool water and trim any excess fat. Pat dry.
2 In small bowl, combine lime zest and juice, oil, ginger root, cilantro, honey, salt, and pepper.
3 Place chicken in resealable plastic bag and pour lime mixture over it. Seal bag and turn to coat.
4 Chill for 2 to 6 hours.
5 Preheat grill to medium-heat or preheat broiler. Spray grill or broiler pan with cooking spray.
6 Remove chicken from marinade. Discard marinade.
7 Grill or broil chicken (if broiling, place close to heat source), turning just once, 15 to 20 minutes, or until juices run clear when pierced with a fork.
