Ingredients
4 lean lamb loin chops (4 to 6 ounces each)
1 tsp black pepper
0.5 tsp salt
2 cup Papaya, fresh, cubes
1 cup peeled and sliced peaches
1 tbsp fresh chopped red onion
2 tbsp fresh cilantro , chopped
1 tbsp fresh lemon juice
0.25 tsp salt
1 cooking spray


Directions
1 Cut all visible fat from the chops. Coat the grill with cooking spray and preheat for 5 minutes.
2 Place the chops in the grill and sprinkle with the pepper and 1/2 teaspoon of salt. Grill for 4-6 minutes.
3 In a medium bowl, mix together the papayas, peaches, onion, cilantro, lemon juice, and 1/2 teaspoon salt.
4 To serve, place one lamp chop on each plate and cover with salsa.
Additional Information
Chop the fruit in small pieces to make a salsa.
