1 tbsp brown sugar
2 tbsp dijon mustard
1 tbsp honey
1 tsp fresh ginger root , peeled and minced
1 cooking spray
4 boneless skinless chicken breasts
1 parsley sprigs (optional)


Directions
1 In a small bowl combine brown sugar, Dijon mustard, honey, and gingerroot; stir well.
2 Coat grill rack with cooking spray; place on grill over medium-hot coals. Place chicken on rack, and brush half of mustard mixture over chicken.
3 Grill, covered, for 5 minutes. Turn chicken and brush with remaining mustard mixture. Cover and grill 5 additional minutes or until chicken is done.
4 Transfer chicken to a serving platter, and garnish with parsley, if desired.
Additional Information
To bake, place chicken in an 11x7x1 1/2-inch baking dish coated with cooking spray. Brush marinade over chicken. Cover and bake at 375 degrees F for 15 to 20 minutes or until chicken is done. Uncover and broil chicken 4 inches from heat (with electric oven door partially opened) for 1 to 2 minutes or until golden.
