Ingredients
12 oz Beets, fresh, slices , scrubbed
0.25 cup orange juice
3 tbsp fat free sour cream
2 tsp grated orange peel
1.5 tsp fresh cilantro , minced
1 pinch salt
1 pinch black pepper
1 medium oranges , cut into 8 segments
1 cilantro sprigs


Directions
1 Grill beets over medium heat about 30 minutes. Let rest until cool to the touch. Peel skin off beets.
2 Using a blender or food processor, puree beets, orange juice, sour cream, and orange rind until smooth. Mix in cilantro and salt and pepper.
3 Spoon mixture into a serving bowl and top with orange segments and cilantro sprigs.
Additional Information
Serve over beef or as a dipping sauce.
