Ingredients
1 lb large raw shrimp , peeled and deveined
2 tbsp low sodium soy sauce
1 tbsp vegetable oil
3 medium garlic cloves , minced
0.25 tsp hot red pepper flakes (optional)
3 fresh green onions , cut into 1-inch pieces
4 green lettuce leaf (optional)


Directions
1 Prepare grill or preheat broiler.
2 Soak 4 (12-inch) wooden skewers in hot water 30 minutes. Meanwhile, place shrimp in large plastic re-sealable food storage bag. Combine soy sauce, oil, garlic, and red pepper (if desired) in cup; mix well.
3 Pour over shrimp. Seal bag; turn to coat.
4 Marinate at room temperature 15 minutes.
5 Drain shrimp, reserving marinade.
6 Alternately thread shrimp and onions onto skewers.
7 Place skewers on grid or rack of broiler pan. Brush with reserved marinade.
8 Grill, covered, over medium-hot coals or broil 5 to 6 inches from heat 5 minutes on each side or until shrimp are pink and opaque.
9 Serve on lettuce-lined plate, if desired.
