0.5 cup low sodium soy sauce
3 tbsp packed dark brown sugar
1 tbsp fresh lime juice
2 tbsp cooking sherry (optional)
1 cup fresh ginger root , grated (or 1 tsp ground)
3 g medium garlic cloves , minced
1.5 lb Beef, flank steak, london broil, lean, raw, 0" trim
3 tbsp grapeseed oil (or olive oil)


Directions
1 In small bowl, stir soy sauce, brown sugar, lime juice, oil, sherry, if desired, ginger, and garlic until sugar is dissolved. Reserve 1/4 cup marinade for basting.
2 Place beef in large resealable plastic food storage bag; add remaining marinade. Seal bag, turn to coat. Marinate in refrigerator several hours or overnight.
3 Remove beef from marinade, discard marinade.
4 Preheat grill to medium high.
5 Cook 10 to 14 minutes (5 to 7 minutes per side) until medium-rare or to desired doneness. Turn once and baste with reserved 1/4 cup marinade. Slice steak diagonally across grain into thin slices.
