Ingredients
1 Papaya, fresh , peeled, seeded, and chopped
2 cup chopped bok choy
1 cup shredded carrots
1 medium red bell peppers , cut into julienne strips
0.33 cup fresh chopped red onion
2 tbsp fresh cilantro , chopped
1 tbsp fresh mint , chopped

dressing
0.25 cup rice vinegar
0.25 cup honey
2 tbsp Oil, eggplant seed, INTL (or grape seed oil)
2 tsp fresh ginger root , grated


Directions
1 In medium bowl, combine all ingredients except dressing; set aside. In small bowl, combine dressing ingredients; pour over vegetable mixture.
2 Stir to combine; set aside for at least 15 minutes to allow flavors to develop.
