Servings
Ingredients
12 oz fresh mushrooms (chanterelle, oyster, or a combination)
3 tbsp Butter, unsalted
1 pinch salt
1 pinch black pepper
2 lb fresh green beans , rinsed


Directions
1 Rinse mushrooms very well and let dry. Cut off any rough ends, bruises, or discolored spots. Chop mushrooms into small pieces or quarters.
2 Heat 2 tablespoons butter in a skillet over high heat. Stir in mushrooms and cook 6 to 10 minutes or until mushrooms are golden. Season with salt and pepper.
3 Slice off stems and strings from beans. Boil a large pot of water and place beans in pot. Cook 5 to 8 minutes or until fork tender. Strain. Move beans back into pot and mix in the rest of the butter. Season with salt and pepper. Spoon green beans into a serving bowl and top with mushrooms.
Additional Information
Prepare mushrooms through step 2 up to 1 day in advance; cool, wrap, and chill. To reheat, stir over medium heat.
