An Asian inspired clear soup.

Servings

0.5 cup cold water
6 cup low sodium vegetable broth
0.5 tsp ground ginger
0.25 tsp black pepper
6 tbsp fresh chopped green onion
6 tbsp fresh mushroom slices

1 In medium pan combine water and broth. Simmer 5 minutes.
2 Stir in ginger and pepper.
3 When ready to serve, top with onions and mushrooms.

Cooked chicken, beef, pork, or shrimp, or tofu can be heated with the broth.
