Servings
Ingredients
1 tsp olive oil
2.5 cup fresh chopped onion
1 tbsp minced garlic
1 tsp oregano leaves
1 tsp salt
2.5 cup chopped tomato
2 medium potatoes , peeled and diced
1.25 lb fresh green beans , stems removed
0.25 cup chopped parsley
0.75 cup crumbled feta cheese (or kasseri cheese)
0.25 cup fresh lemon juice


Directions
1 In large stock pot, heat oil over medium. Add onions and garlic. Sauté on low heat for 10 minutes, until onions are translucent, stirring often to prevent sticking.
2 Add oregano, salt, tomatoes, potatoes, and beans. Cover and simmer for about 20 minutes, until potatoes and beans are tender.
3 Just before serving, add parsley, lemon juice and pepper to taste. Sprinkle with cheese.
Additional Information
Kasseri cheese is a dry, crumbly sheep's milk cheese that melts easily.
