Ingredients
8 chicken drumsticks, raw , skinned, rinsed, and patted dry
1 chopped green bell peppers , slice thinly
2 yellow onion , slice thinly
2 medium lemons
1.5 tsp oregano leaves
0.25 tsp garlic powder
0.75 tsp salt
0.12 tsp black pepper
1 pinch paprika
1 cooking spray


Directions
1 Preheat the oven to 350 degrees F.
2 Place the chicken, bell pepper, and onion in a 9 x 13-inch baking pan and squeeze the juice of one lemon over the top. Grate 1 teaspoon of lemon rind.
3 Sprinkle the lemon rind, oregano, garlic powder, 1/2 teaspoon salt, pepper, and paprika over the chicken mixture.
4 Spray with cooking spray and bake for 30 minutes. Flip the chicken over and cook for another 30 minutes or until chicken is no longer pink in the middle.
5 Once the chicken is cooked, set on a platter and add 1/4 teaspoon salt and the rest of the lemon juice to the vegetables.
Additional Information
Try with 3/4 cup cooked orzo pasta or 1/2 cup steamed asparagus.
