Ingredients
3 tbsp olive oil
1 medium onions , finely chopped
10 oz frozen chopped spinach , thawed, drained, and squeezed dry
1 tsp salt
4 oz crumbled feta cheese
0.5 cup cottage cheese
1 eggs , beaten
16 oz phyllo pastry dough sheet
1 cup Butter, unsalted , melted


Directions
1 In saucepan over medium, heat olive oil and slowly cook onion ,stirring often, until tender; about 5 minutes.
2 Add spinach, salt. feta cheese, cottage cheese, and egg.
3 Stir and cook until thickened, 5 - 10 minutes. Reduce heat to simmer.
4 Preheat oven to 400°F.
5 Unroll phyllo sheets one at a time on a flat surface. Brush each with unsalted butter. Cut into strips approximately 5 inches wide.
6 Place 1 tablespoon onion, spinach, and feta mixture at one end of each dough strip.
7 Fold end of strip over filling to form a triangle. Continue folding in triangles to form small, triangular stuffed pastry.
8 Brush with unsalted butter. Repeat steps #5-7 with remaining phyllo dough.
9 On large baking sheet, arrange stuffed triangles, bake 12 - 15 minutes, until golden brown. Serve warm.
Additional Information
NOTE: If using frozen phyllo dough, thaw at room temperature 2 hours prior to use.
